Montague ovens are in my opinion the BEST ovens available on the market. Built like a tank thru and thru⌠They boast the highest BTU output of any convection oven available on the market today. 115,000 BTU per deck (230,000 Total BTU Output). If you are in a production bakery where the doors are opened frequently, oven temperature recovery is instantaneous. You will get a more consistent product and your production will soar. Pans will NOT have to be rotated if at all because the oven chamber temperature will be even and consistent throughout the bake.
